MEXICAN CHICKEN SOUP
Recipe type: Soup
 
Ingredients
  • 100g raw chicken breast (this will need to be cooked - steamed/grilled/roasted - then cut into small chunks
  • 2 cups chicken stock
  • 3-4 cloves garlic chopped or equivalent minced garlic
  • ½ teaspoon onion powder
  • ½ teaspoon chilli powder
  • ½ teaspoon cayenne pepper (can be HOT)
  • 1 large tomato (or quota) chopped
Instructions
  1. Cook the garlic in a little of the chicken stock. Add the ingredients apart from the chicken breast. Bring to boil, reduce to a simmer and add the cooked chicken breast chunks. Simmer for 15-20 minutes. Serve decorated with a sprig of fresh parsley.
