Prawn & Tomato Salad
Recipe type: Salad
- 100g cooked, peeled prawns (if large, cut into smaller pieces)
- 1-2 tomatoes depending on size (vegetable quota), diced
- juice of half a lemon
- chopped parsley
- salt and pepper to taste
- optional: ¼ teaspoon minced garlic
- optional: dash of Tabasco sauce
- In a bowl, create the dressing to your taste combining the lemon juice, salt and pepper, minced garlic and Tabasco. Stir in the prawns, then the tomato and parsley.
- Additional lemon juice can be squeezed over the top if desired.
