Prawn & Tomato Salad
Recipe type: Salad
  • 100g cooked, peeled prawns (if large, cut into smaller pieces)
  • 1-2 tomatoes depending on size (vegetable quota), diced
  • juice of half a lemon
  • chopped parsley
  • salt and pepper to taste
  • optional: ¼ teaspoon minced garlic
  • optional: dash of Tabasco sauce
  1. In a bowl, create the dressing to your taste combining the lemon juice, salt and pepper, minced garlic and Tabasco. Stir in the prawns, then the tomato and parsley.
  2. Additional lemon juice can be squeezed over the top if desired.
